calderetta

Caldereta

Ingriedients:

- 1 Lbs. of Beef Ribs, 2 Cans of Liver Spread, 1 Can of Green Peas, 4 pcs of Yukon Potato, 1 pc of Onion, 2pcs of Garlic, 2 tbsp of Pepper, 2 pcs of hot chillies, 1 pcs of Red Bell Peppers, 3 pcs of Carrotts, 1 tsp of Vinegar, 1 Cup of Chicken Broth

Procedure

Marinate beef in mixture of vinegar, peppercorn, salt and crushed garlic for 1 1/2-2 hours. Fry pieces of beef in cooking oil. Add onions and saute until tender.Pour in tomato sauce and boiling water. Add the green pepper, bay leaf and hot sauce as desired. Cover and simmer until meat is tender. Blend in liver spread. Cook 5 minutes more than serve hot with steamed rice.

Pancit

Pancit Bihon

Ingriedients

1/4 Cup cooking oil, 2 cloves garlic, minced 1 onion minced, 1 cup boiled pork sliced,1 small cabbage, shredded, 1 large carrot strips, 2 tbps soy sauce, 1 1/2 cup broth, 1 bunch chinese celery, 1 bundle Super Q Special Bihon or any of your favorite noodles, 1 tsp salt/pepper, 2pcs of Chorizo(chinese sausage) fried and sliced spring onion, chopped.

Procedure

Saute garlic in cooking oil, add onions, pork, carrot and cabbage. Season with soy sauce and fry for 2 minutes. Add broth and simmer, add kinchay. When vegetables are cooke, mix in soaked and drained bihon and season with salt and pepper. Garnish with chorizo, canton(optional) and spring onions. Serve with Calamansi.

Sinigang na Baboy

Ingriedients

2 Cloves garlic, crushed, 1 onion, 6 medium sized tomatoes, 10 pcs camias, 1 tbsp patis, 1/2 kilo pork belly with bone cut in serving pcs., 6 pcs native gabi(taro) 1 tbsp of vegetable oil, 5 pcs. long sili(hot peppers), 1 1/2 tsps salt, 6 cup rice water, 3 cup kangkong leaves or (swamp cabbage)

Procedure

Saute the garlic in hot vegetable oil until golden brown. Add the onions and cook until they become transparent. Put in the tomatoes and camias, when soft, crush them and add the patis. Drop the pork and cook covered for 5 minutes. turning occasionally. Pour in rice water and cover tightly. Let boil. When boiling reduce the heat and simmer until pork becomes tender. Add gabi. When tender drop the kangkong and sili . Season with salt and pepper or mine I like a bit spice so I used "Sinigang sa sampalok Hot" seasoning mix then serve hot. Like a soup. You can serve this with rice or by itself is good enough. If you get bored with this try addding shrimp instead of pork. or fish or just vegetable is great.

Kare Kare

Ingriedients

4 pcs of pata(pork legs) or any meat you like., 1/2 Kilo of pork ribs cut into small pieces just to add some meat not all bone, 6 cups of water, 1/2 cup atchute seeds for coloring, 1/2 cup water, 4 pcs of eggplants, 2 bundles of sitao, 1 puso ng saging or bok choy, 1 head garlic chopped, 2 onions sliced, 1/2 cup cooking oil, 1/2 cup bagoong alamang, 1 vup ground peanuts, 1 cup toasted ground rice, salt and little chilli flakes.

Procedure

Boil the pork legs and pork ribs in water until tender. Cut into desired pieces and set aside. Soak atsuete seeds in water. Rub to bring out color. Set aside.Cut vegetables into desired pieces. boil water, drop sitao and parboil. Remove set aside. Do likewise with eggplants and puso ng saging. Saute garlic and onions in cooking oil. add bagoong and atsuete water. Let boil 5 minutes Blend ground peanuts and ground rice. Bring to a boil then put in the meats. Just before removing from the fire, add teh vegetables. Serve with bagoong guisado.

Or you can skip the atsuete seeds, ground rice and peanuts just buy the 'Kare-Kare' mix from us. For us we tested it and its pretty close to manual way of preparing this dish.​

Pancit Canton

Ingriedients

1 lbs of pork, 1 cup of sitsaro, 1 cup of shrimp, 1 cup of cabbage, 1/2 cup of chicken liver,1 sting of celery, 1 cup carrots, 1 cup of tofu, 1 onion, soy sauce,fish balls, 1 canton noodles, 4 cloves of garlic

Procedure

Saute garlic and onion, then add shrimp pork, chicken liver bring to boil then add soy sauce , carrots, tofu, celery and cabbage all together, then drop the noodles and mix till the vegetable becomes soft.

Other Options

If time is constraint. You can buy the Pancit Canton seasoning from us. It will be the same taste for a short time preparation.
